My kefiring and cottage cheese production

Not that I was suffering from a lack of food in Angola, not at all, but over time, I began to miss some foods. I started to miss kefir, or something as ordinary as cottage cheese. So I set out to search the Internet again, but even a few days of hard searching brought me nothing out of the ordinary. All attempts to make cottage cheese from pasteurized milk were useless. In short, it wasn't the real cottage cheese my taste buds wanted. Kefir grains Cheesecakes or cheese desserts with fruit were still out of sight. Until! Until my friend Jindra asked me if I wanted kefir beans. My heart longing for kefir cheered and the answer was clear. I got a spoonful of kefir grains and thus started my career as a "kefir".

There was so much Kefir that we didn't drink it. A refrigerator filled with pitchers of kefir made me think and search the internet again and find out how it could still be used. It was a system of trial and error, but in the end I managed to make ... SHAPE! Exactly the way I like it. I could expand my baking skills and start baking cakes filled with cottage cheese, cooking cheese dumplings with mango or other delicacies ...

I was in high anticipation of what would happen. The next day (after twenty-four hours) I had a liter of fantastic and healthy yogurt. I know it's a banality :-) that each of you can buy yogurt, kefir or cottage cheese, but for me it was one big victory and one unfulfilled desire less. During my kefiring, I worked my way by mixing milk and cream in various proportions, also to sour cream, or mascarpone. Thanks to kefir grains, I was therefore able to start making cheese. Step by step, grain to grain and I have a small dairy factory at home ...
